Chicken and Goat Cheese Manicotti

The night Annaka was born this amazing lady, I still don't know her name!, made us the most amazing dish. The kind of dish you ask for on your death bed! Really it was just that good! Well, like I said I don't know her name to get the recipe. So, for those who know me personally, this is what I'm known for in cooking land, I just make something as close as I can imagine it and here is what I came up with to match it! You must try making this! It's SO good! If you make it and figure out a way to make it better DO share! I'm always up for advice on my food! 

Chicken and Goat Cheese Manicotti

1 Box Manicotti Shells
1 serving sauce (I use Organic Ragu, because it super thin, no chunks)
1 good size zucchini diced
large handful mushrooms diced
1/2 onion diced
1 small container ricotta
6oz goat cheese
2 Large handfuls baby spinach chopped small
2 eggs
1/2 cup parm or Romano
1/2 cup mozzarella
1 large chicken breast
salt, pepper, garlic powder

Turn oven to 350. Trim chicken of excess fat. Sprinkle with salt, pepper and garlic powder. Heat pan with oil or butter place chopped onion in pan. Let onion caramelize. While onion caramelize get water on to boil for shells. When shells are boiled (under boil them) put back in plastic separator they were packaged in so they can cool without sticking together. Add chicken let cook through about 5-7 mins. Set aside on cutting board, and let cool. Add zucchini and mushrooms maybe some more oil/butter to prevent burning and to pull bits of chicken from bottom of pan. Cook about half way then add whatever sauce your using and simmer cook with lid.

In large bowl crack eggs, beat well. Add Goat Cheese, Ricotta, mozzarella, parm and spinach. Mix well. Add salt and pepper to taste. Set in freezer or fridge while preparing chicken, in the next step.

Once chicken is cooled. Cut into little chunks. Take cheese from cooling area and mix in chicken. Chicken must be cool at this point. Gently use smaller spoon to put cheese mixture into shells. Place shells in 9X13 pan. Pour Sauce mixture on top of shells and bake for at least 20 mins

 

Baked Oatmeal

The dearest friend of mine just recently gave me this amazing recipe for baked oatmeal! Thanks Anna! Yes that is one of Annaka's name sakes! Love you momma! Here it is and what I did to it.
 
Baked Oatmeal:
2 eggs beaten
1 cup milk (I used coconut milk)
1/2 c applesauce
1/2 cup brown sugar (you could use honey)
1 tsp baking powder
1/2 tsp salt
1 1/2 cups oatmeal
*Seasoning - cinnamon, allspice, vanilla, almond etc. ( I used cinnamon, vanilla and almond extract )
*Fresh fruit or dried fruit (I used frozen blueberries)
*Nuts (I used slivered almonds in it and sprinkled on top :) )
*Optional

Beat Eggs well, add all other ingredients and bake at 350 for 30-40 mins. 
Let cool slightly and enjoy all day! Yum! 
I ate this as a dessert that evening, it was so yummy and guiltless!
